Cardamon Chicken | Elaichi

Cardamom chicken is an Indian dish made with cardamom and spices. Delicious cardamom chicken cooked to tender perfection in a blend of spices.

INGREDIENTS
500g chicken
2 large onions, pasted
1 tsp garlic paste
1 tsp ginger paste
2 whole red chillies
2 bay leaves
1 tbs poppy seeds,
soaked and ground
1½ cups milk
1 level tsp salt
1 tsp red chilli powder
½ cup ghee

ROAST AND GRIND
(Garam masala)
1 stick cinnamon
1/2 tsp cumin
5 whole cloves
6 black pepper corns
1 tsp dry coriander

GRIND TOGETHER
12 cashew nuts
12 green cardamom seeds
1 pinch mustard powder

METHOD
In a heavy based saucepan heat the ghee and put in the onion, garlic and ginger paste. Fry for five minutes.

Add chicken pieces and fry to a light brown colour on slow fire. Add the garam masala, red chilli powder, red chillies and bay leaves and fry for two minutes.

Then add 1/2 cup water and let simmer until it is 3/4 cooked and the water is dried.

Now add the cashew nut powder, cardamom and mustard along with milk and poppy seed paste.
Cook on slow fire stirring it all the time until the gravy is thick. Lastly add salt cook for further 2 minutes.
