Keep cool with these summer cocktails

Hills wines, spirits and ciders are fantastic just as they are, but if you’re looking for something a little bit different for your summer dinner party, here are a few recipes you just can’t go past.

Lobethal Road White Wine Sangria

Ingredients:
1–2 cups of fruit (slices of lime and/or lemon, strawberries (halved), diced mango, apple wedges, et cetera – whatever is fresh, ripe and in season. The pieces don’t need to be too small, but they should look pretty!)
1/3 cup caster sugar
(reduce to taste as required)
1 x 750ml bottle Lobethal Road
Sauvignon Blanc
¼ cup brandy (optional)
1.25 litres soda water
Ice cubes

Method:
Combine sugar, brandy and wine in a large jug or bowl. Stir until sugar is dissolved. Add fruit.
Cover and refrigerate for a couple of hours to allow flavours to develop. Add soda water to the jug just before serving. Pour into a glass over ice, garnish with fruit and fresh herbs. Serve immediately!

Grünthal Green Valley Gimlet

Ingredients and equipment:
Martini glass
Boston shaker
Ice
45ml Grünthal Gin (green label)
30ml freshly squeezed lime juice
30ml sugar syrup (see below for recipe*)
Dehydrated lime (to serve)

Method:
Half fill the Boston shaker with ice.
Add the Grünthal green label gin, freshly squeezed lime juice and sugar syrup.
Shake very hard for 30 seconds.
Strain into a chilled martini glass.
Garnish with dehydrated lime.

  • To make the sugar syrup, combine 1 cup of caster sugar and 125ml cold water in a small saucepan. Gently bring it to a simmer (do not boil) until all sugar dissolves. Allow to cool completely before using.

Udaberri’s Lenswood Julep

Ingredients and equipment:
Metal cup
60ml Lobo Apple brandy
20ml blood orange honey
20ml earl grey tea
8 apple mint leaves
Ice
Garnish – 3 mint sprigs,
orange zest dipped in honey

Method:
Crush the ice and prepare garnish.
Churn all ingredients through the crushed ice for 20 seconds.
Top with crushed ice and garnish

78 Degrees Sunshine Fizz

Ingredients and equipment:
50ml of 78 Degrees Sunshine State Gin
3 wedges pineapple
20ml lemon juice
20ml sugar syrup
15ml Aquafaba
Rocks glass
Ice

Method:
Muddle pineapple in base of a cocktail shaker.
Add the remaining ingredients and shake hard with ice.
Serve in a rocks glass with ice.
Garnish with a mint sprig
and pineapple wedge.

Hills Cider South Cider Spritz

Ingredients and equipment:
20ml 78° Australian Vodka
20ml Elderflower cordial
1x bottle of Hills Cider apple cider
Hiball glass
Apple slice

Method:
Pour vodka into glass, followed by
elderflower cordial.
Top up the glass with cider.
Garnish with an apple slice.
